This is a vegetarian panini that won't let you down! The hummus and chimichurri sauce add so much flavor to the grilled veggies, you won't miss the meat!

Serves: 2
  • 1 loaf of ciabatta bread cut into preferred portions
  • 1 zucchini, halved and sliced thin
  • 1 red bell pepper, halved with seeds and pulp removed
  • 10 stalks asparagus
  • 1 cup chimichurri sauce
  • ½ cup hummus
  • asiago cheese, thinly sliced
  1. Grill the veggies, cut the peppers into 1 inch pieces
  2. Toss the veggies in the chimichurri sauce
  3. Brush the outsides of the bread in melted butter
  4. Layer hummus, veggies, and cheese on the bread
  5. Grill on panini press for about 5=8 minutes until cheese is melted and bread is toasted
