Herbal iced tea, sweetened with vanilla simple syrup, makes for a very refreshing sweet drink on a hot day. Make with half herbal tea and half black tea if you'd like a caffeine boost.

Ingredients
Vanilla simple syrup:
1 cup sugar
1 cup water
1 vanilla bean, split lengthwise
Tea:
4 tea bags of your choice (I used blueberry flavored herbal tea)
4 cups water
½ vanilla bean, split lengthwise
Instructions
To make the simple syrup, combine the sugar and water in a small saucepan
Bring to boil, stirring gently
Boil until the sugar has dissolved and the mixture is clear, remove from heat and let sit for 10 minutes
Put the vanilla bean into a heatproof jar with a lid, pour the sugar water into the jar
Put the lid on and let it steep in the fridge for 1 day
To make the tea, bring 4 cups of water to a boil in a tea kettle
Add the tea bags and the vanilla bean to the kettle, put the lid back on, and let sit for 30 minutes.
Take the vanilla bean out, scrape any leftover caviar into the tea
Pour the tea through a strainer into a heat proof pitcher
Put the pitcher in the fridge until chilled, about 2 hours
Pour the tea into a glass with ice and sweeten with the vanilla simple syrup
