Carne Asada Style Slow Cooker Goose

This recipe is a great way to introduce non-wild game eaters to wild game and is one of my favorite recipes. The best part is you get to make it your own.

Ingredients
  • 4 goose breasts
  • salt
  • 1 onion, finely chopped
  • 5 cloves garlic, minced
  • a handful of cilantro, chopped
  • salt & pepper
  • 1 orange
  • 2 limes
  • 1 c Mexican beer
  • For serving:
  • warm flour tortillas
  • assorted salsas
Instructions
  1. Dissolve enough salt in a couple cups of water in a large ziploc bag to make it salty like the sea. Place the goose breasts into the saltwater and refrigerate overnight. Rinse goose breasts and pat dry.
  2. Mix the onion, garlic, cilantro, salt and pepper (to taste) together. Place two goose breasts in a slow cooker and top with half of the onion mixture. Repeat with the remaining goose breasts. Add the juice of the orange and limes as well as the beer.
  3. Cook on low for 8-10 hours. Shred the goose breasts. Remove cooking liquid from the slow cooker and reserve. Add back the shredded goose and enough liquid to moisten to taste - i added about a cup.
  4. Serve with warm tortillas, pico, avocado slices, cojita cheese, tomatillo salsa, pinapple salsa, pico de gallo, fresh salsa, or other fresh salsas.
