Crockpot Chili with Fresh Duck

A simple twist on your standard chili, this is a great way to utilize the ducks you harvest during the fall season!

Ingredients
  • 1½ pounds of duck meat (breasts of 4-5 ducks)
  • 4 14.5 oz cans of diced tomatoes
  • 2 14.5 oz cans of tomato sauce
  • 1 large onion
  • 1 green pepper
  • 1 jalapeno
  • 4 cloves garlic
  • 1 teaspoon oregano
  • 1 teaspoon cumin
  • 2 teaspoons chili powder
  • ½ teaspoons pepper
  • (kidney or other beans if you want them 1-2 cans)
Instructions
  1. Clean the duck breasts and cut into small chunks
  2. Chop the green pepper, jalapeno, onion, and garlic
  3. Put the duck breast into the crock pot, add peppers, onion, garlic, and oregano, cumin, chili powder, and pepper, then add the tomatoes and tomato sauce
  4. Stir and cook on high for 4 hours or low for 8 hours
  5. Enjoy
