Sweet Potato Hash

A quick and easy breakfast, lunch or dinner hash that is packed full of delicious veggies starting with vitamin packed sweet potatoes and topped with a fried egg (or two).

Ingredients
  • 1 medium sweet potato, grated
  • 1 T olive oil
  • ¼ c red onion, diced
  • ¼ c red bell pepper, diced (about a half a pepper)
  • 1 c baby spinach
  • ¼ c queso fresco
  • 2 poached or fried eggs
  • Salt & pepper
Instructions
  1. Heat the olive oil in a pan over medium heat. Add the sweet potato, season with some kosher salt and cook for about 5 minutes, stirring periodically.
  2. Add the onions and bell pepper and cook for 4 more minutes.
  3. Add the spinach and cook for another minute until the spinach wilts.
  4. Remove hash to a plate and top with queso fresco.
  5. Fry two eggs in some butter in the same pan you used to cook the hash. Or poach two eggs.
  6. Top hash with fried eggs.
  7. Season with salt and pepper.
