Homemade strawberry syrup makes for a great breakfast treat.

Serves: 2 cups
Ingredients
  • 4 c hulled strawberries, halved
  • ½ c water
  • 1 c sugar
  • ½ T vanilla, optional
Instructions
  1. Combine all ingredients together in a pot. Bring to a boil over medium heat. Cover and simmer 10 minutes.
  2. Strain using a mess strainer, using a wooden spoon to push as much liquid as you can through the strainer.
  3. Return liquid to the pot. Reserve the strawberry pulp for another use.
  4. Bring to a boil, reduce to a simmer. Simmer with the lid off for 15-20 minutes, until the syrup coats the back of a spoon.
  5. Cool to room temperature before serving, the syrup will continue to thicken as it cools.
