Grilled Teriyaki Shrimp & Pineapple Skewers

A tangy and sweet teriyaki shrimp skewer that comes together in about 45 minutes including making a homemade marinade. Use whatever size shrimp you want, just adjust the cooking time as needed. Serves one as a meal or 2-3 as an appetizer.

Ingredients
  • Marinade:
  • ¼ c low sodium soy sauce
  • 1 t worchestershire sauce
  • ¼ c pineapple juice
  • 1 t fresh ginger, grated
  • 1 clove garlic, grated
  • 2 T brown sugar
  • Skewers:
  • 15 medium shrimp
  • 15 pieces of pineapple, cut to same size as shrimp
  • 5 wooden skewers, soaked in water for 30 minutes.
Instructions
  1. Whisk together all the marinade ingredients. Add the shrimp and refrigerate for 30 minutes.
  2. Meanwhile, prepare grill for medium-high heat.
  3. Remove shrimp from marinade and discard.
  4. Alternate threading shrimp and pineapple onto the skewers, 3 pieces each.
  5. Grill for 4-5 minutes, flipping halfway through.
  6. Serve immediately.
