Ooey Gooey Butterscotch Chocolate Chip Bars

A twist on classic 7 layer bars that adds an ooey gooey sweetened condensed milk layer in the middle.

Serves: 24-32 bars
Ingredients
  • 1-1/4 c flour
  • 1 c quick cooking oats
  • 2 c sweetened shredded coconut
  • ¾ c dark brown sugar
  • 1 c butter, softened
  • 1 egg
  • 1 t vanilla
  • 1 c chocolate chips
  • 1 c butterscotch chips
  • 1 – 14 oz can sweetened condensed milk
Instructions
  1. Preheat oven to 350 degrees. Grease a 9x13 baking dish.
  2. Combine flour, oats, coconut, and dark brown sugar in a mixer on low speed until evenly mixed together.
  3. Add the butter and mix until crumbly.
  4. Add egg and vanilla and mix until combined.
  5. Stir in the chocolate and butterscotch chips.
  6. Reserve 1-1/2 c of the dough and press the remaining dough into the bottom of the baking dish.
  7. Bake for 10 minutes.
  8. Pour the sweetened condensed milk evenly over the crust, tipping the pan gently to get it to spread evenly.
  9. Crumble the remaining dough over the top into an even layer, or as even as you can. There will be gaps where you can see sweetened condensed milk.
  10. Bake 25-30 minute until golden brown.
  11. Cool and cut into bars. I either cut into 24-32 bars depending on who and how many people I’m serving.
