A moist, chewy, yet slightly crispy graham cracker cookie that elevates this iconic snack.

Ingredients
  • 1 – 14 oz box honey graham crackers (27 full-size 5”x2.25” crackers)
  • ½ c sugar
  • ¼ c packed brown sugar
  • 1 t baking soda
  • ½ t salt
  • 12 T butter, melted & cooled (1 ½ sticks)
  • 2 eggs
  • 1 t vanilla
Instructions
  1. Preheat oven to 350 degrees and line baking sheets with parchment paper.
  2. Process graham crackers in a food processor until they are the texture of cornmeal.
  3. In a large bowl mix graham cracker crumbs, sugar, brown sugar, baking soda and salt. Whisk to combine.
  4. Add butter, egg, and vanilla. Lightly whisk the eggs and then fold together into a loose dough with a rubber spatula.
  5. Using a cookie scoop (I used a 1.5 Tablespoon scoop) portion out the dough. Roll in the palm of your hands to form a ball and place on a baking sheet, spacing 2 inches apart.
  6. Bake for 8 to 10 minutes until cookies are lightly brown.
  7. Cool for 5 minutes on baking sheet. Transfer to wire rack and cool completely.
