Oatmeal Banana Cookies

A soft cakelike banana and oatmeal cookie, that’s a great way to use up those too ripe bananas.

Serves: ~36 cookies
Ingredients
  • ¾ c shortening
  • 1 c sugar
  • 1 egg
  • 1 c mashed banana (about 3)
  • 1 ½ c flour
  • ½ t baking soda
  • 1 t salt
  • ¾ t cinnamon
  • 1 ¾ c oatmeal (I used quick cooking oats)
Instructions
  1. Preheat oven to 350
  2. Cream shortening and sugar together in a stand mixer on medium.
  3. Beat in the egg.
  4. Beat in mashed banana.
  5. In a separate bowl, whisk together, flour, baking soda, salt and cinnamon.
  6. Stir into creamed mixture.
  7. Stir in oatmeal.
  8. Scoop 1.5 T portions onto a parchment lined baking sheet.
  9. Bake for 10-12 minutes until lightly golden.
  10. Cool on baking sheet for 2 minutes and then transfer to wire rack.
