These quick and easy breakfast nachos are a fun take on breakfast. Feel free to substitute tortilla chips for the corn tortillas and skip the step of baking them

Ingredients
  • 5-6 corn tortillas
  • olive oil
  • ¼ c salsa verde
  • 2 slices bacon, cooked & crumbled
  • ½ c shredded cheese
  • ½ avocado, diced
  • 2 fried eggs
  • handful cilantro, chopped
Instructions
  1. Preheat the oven to 350 degrees and line a baking sheet with parchment.
  2. Brush each side of the tortillas lightly with olive oil. Stack the tortillas and cut them into sixths. Spread into a single layer on the parchment. Bake for about 10 minutes until crisp and lightly brown on the edges.
  3. Turn the oven up to 400 degrees.
  4. Push the chips together. Spoon on the salsa verde and then sprinkle with cheese and bacon. Bake for an additional 3-5 minutes until cheese is melted.
  5. While the nachos are baking, cook the eggs as desired.
  6. Top the nachos with diced avocado, eggs, and cilantro.
  7. Break the yolk with the first chip to create a sauce for the nachos.
