A fruit salad that’s perfect for when fresh fruit isn’t in season. It combines canned with fresh fruit and makes a nice glaze from the juice of the canned fruit.

Ingredients
  • 2 cans Del Monte chunky mixed fruit, in juice
  • 1 small package vanilla pudding mix (not instant)
  • Fresh strawberries, quartered
  • Blueberries, 1 cup
  • 2 sliced bananas
Instructions
  1. Mix pudding mix with 1 cup of juice from the canned fruit in a medium bowl. Microwave for a minute, then continue in thirty second intervals until thick, stirring in between.
  2. Stir in the strawberries and canned fruit.
  3. Chill for a couple hours.
  4. Mix in blueberries and sliced bananas.
  5. Serve.
