A quick and easy dish with crunchy toast, creamy avocado, and a rich runny egg yolk that is on the breakfast or dinner table in less than 10 minutes.

Ingredients
  • 1-2 pieces toast (depending on size)
  • ½ avocado, mashed
  • 2 eggs
  • sriracha
  • salt & pepper
Instructions
  1. Place toast on a place.
  2. Spread with mashed avocado.
  3. Heat a saute pan over medium-low heat. Melt a half a tablespoon of butter in the pan. Crack the two eggs, one each into small bowls. Gently pour the eggs into the pan. Cook for about a minute until the whites start to set along the edges. Carefully flip. Cook another minute until the whites set but the yolk is till runny.
  4. Place eggs on top of the avocado on the toast.
  5. Sprinkle with salt and pepper. Drizzle with sriracha to taste.
