Chicken Fried Rice

An Americanized version of fried rice that comes together quickly on a weeknight.

Ingredients
  • 5 slices bacon, cut into lardons
  • 1 small onion, diced
  • 2 chicken breasts, cut into bite sized pieces
  • 2 eggs, beaten
  • 1.5 c uncooked Jasmine rice, cooked
  • 1-2 T fish sauce
  • 1-2 T oyster sauce
  • 2-4 T sweet soy sauce
  • 1 can peas, drained
Instructions
  1. Fry bacon over medium-low heat until cooked. Remove from pan.
  2. Cook onion in bacon fat over medium heat until it softens and become translucent.
  3. Add chicken and sauté until browned and cooked through. Push chicken and onion to the side.
  4. Pour in the egg and scramble.
  5. Add the bacon back and mix everything together.
  6. Turn the heat to medium-low. Mix in the rice.
  7. Add the fish, oyster, and sweet soy sauces. Mix together and adjust seasoning to taste.
  8. Remove from heat and stir in the peas.
  9. Serve with extra sweet soy for drizzling.
