White Chocolate Chunk Macadamia Nut Cookies

A classic buttery cookie with white chocolate and crunchy macadamia nuts.

Serves: 2-1/2 dozen
Ingredients
  • 1 c packed brown sugar
  • ½ c sugar
  • ½ c butter
  • ½ c shortening
  • 1 t vanilla
  • 1 egg
  • 2-1/4 c flour
  • 1 t baking soda
  • ¼ t salt
  • 6 oz bar of white chocolate, cut into chunks
  • 4 oz bag of macadamia nuts, coarsely chopped
Instructions
  1. Preheat oven to 350 degrees. Line baking sheets with parchment paper.
  2. Cream sugars, butter, and shortening in a stand mixer on medium-high until light and fluffy. Beat in egg and vanilla.
  3. Mix together flour, baking soda, and salt. Stir into creamed mixture.
  4. Gently stir in white chocolate chunks and chopped nuts.
  5. Scoop onto a cookie sheet with a medium sized cookie scoop or drop by tablespoonfuls onto prepared baking sheets.
  6. Bake 10-12 minutes until lightly golden.
  7. Cool 1-2 minutes on rack. Transfer to wire rack to cool completely.
