Easy crepe-like pancakes. I love these with blueberries, and they are good plain or any of your favorite pancake mix-ins! The recipe is simple and easily expands from enough for just you to enough for your whole extended family. This recipe is just enough for one, to expand it, just add 1 cup flour, 1 cup milk, and 1 egg for every person.

Ingredients
  • 1 egg
  • 1 cup flour (I used whole wheat)
  • 1 cup milk
  • ¼ cup blueberries
Instructions
  1. Beat the egg and milk together in a medium sized bowl
  2. Slowly mix in the flour, careful not to over work the batter, some lumps are okay
  3. Pour about ΒΌ cup of batter onto a hot griddle or pan, drop in desired amount of blueberries
  4. When little bubbles start to form, flip the pancake over and continue cooking until golden brown.
  5. Once pancake is golden brown, transfer it to a plate and cover to keep warm
  6. Repeat until all the batter is used
