Our family’s take on fruitcake, gumdrop bread is full of spice drops, nuts, and golden raisins in a tender bread.

Ingredients
  • 2 c flour, divided
  • ½ t baking soda
  • ½ t nutmeg, fresh grated
  • ½ t cinnamon
  • ¼ t salt
  • 1 lb spice drops (no licorice), quartered
  • ½ lb golden raisins
  • ½ c chopped walnuts
  • ½ c butter, softened
  • 1 c sugar
  • 1 egg
  • ¾ c unsweetened applesauce
Instructions
  1. Preheat oven to 275-300 degrees. Grease and line 2 - 8 ½ x 4 ½ inch loaf pans with parchment paper.
  2. Whisk together 1 ½ c flour, baking soda, nutmeg, cinnamon and salt in a medium bowl.
  3. In another bowl combine spice drops, raisins, walnuts and ½ c flour.
  4. In a stand mixer (or large bowl with hand mixer) cream butter and sugar until light. Beat in the egg.
  5. With the mixer on low, alternate adding the flour mixture and apple sauce in thirds. Stop when combined.
  6. Using a wooden spoon or rubber spatula fold in gumdrop mixture.
  7. Pour into prepared loaf pans.
  8. Bake for at least 2 hours until golden and a toothpick inserted into the loaf comes out clean.
  9. Cool completely on a wire rack before slicing.
