A muffin like quick bread loaf that is equally good with blueberries or apple pie filling.

Serves: 2 loaves
Ingredients
  • ¾ c butter at room temperature
  • 1 ¼ c sugar
  • 3 eggs
  • 8 oz sour cream
  • 1 t vanilla
  • 3 c flour
  • ¾ t baking powder
  • ½ t baking soda
  • ¾ t salt
  • ½ t cinnamon
  • 2 c blueberries
  • Turbinado sugar
Instructions
  1. Preheat oven to 350 degrees. Grease two bread pans.
  2. Cream butter and sugar together. Beat in eggs, sour cream and vanilla.
  3. In a separate bowl mix together flour, baking powder, baking soda, salt and cinnamon.
  4. Stir in the flour mixture until just combined.
  5. Fold in blueberries.
  6. Divide mixture between two pans.
  7. Bake for 1 hour until a toothpick comes out clean. Cool bread in pans.
  8. Serve with butter or jam.
  9. VARIATION: 1 pint apple pie filling, with extra syrup drained and apples cut into ¼ to ½ inch pieces.
