Blueberry Bread

Serves: 2 loaves
- ¾ c butter at room temperature
- 1 ¼ c sugar
- 3 eggs
- 8 oz sour cream
- 1 t vanilla
- 3 c flour
- ¾ t baking powder
- ½ t baking soda
- ¾ t salt
- ½ t cinnamon
- 2 c blueberries
- Turbinado sugar
- Preheat oven to 350 degrees. Grease two bread pans.
- Cream butter and sugar together. Beat in eggs, sour cream and vanilla.
- In a separate bowl mix together flour, baking powder, baking soda, salt and cinnamon.
- Stir in the flour mixture until just combined.
- Fold in blueberries.
- Divide mixture between two pans.
- Bake for 1 hour until a toothpick comes out clean. Cool bread in pans.
- Serve with butter or jam.
- VARIATION: 1 pint apple pie filling, with extra syrup drained and apples cut into ¼ to ½ inch pieces.
