Fresh from the Garden Tomato Soup

Looking for a way to use up the tomatoes in your garden? Try this soup, Its easy and tastes just like summer. Feel free to double or even triple the recipe if you have a big family or want to freeze some for later.

Ingredients
  • 1 T olive oil
  • 1 medium sweet onion chopped
  • 2 t balsamic vinegar
  • 2 t sugar
  • 2 garlic cloves, minced
  • Salt
  • 4 c sliced cherry or grape tomatoes
  • 1 – 14.5 oz can chicken broth
  • Salt and pepper to taste
  • Basil for garnish
Instructions
  1. Heat the oil in a pot. Add the onions and sauté for 5-7 minutes until softened and translucent.
  2. Add balsamic vinegar, sugar, and garlic. Cook for another 2-3 minutes.
  3. Add the tomatoes and bring to a simmer. Cook for 10 minutes until tomatoes are soft and breaking apart.
  4. Stir in the chicken broth and return to a simmer. Cook for 5 minutes more. Taste and season with salt and pepper as needed.
  5. Puree the soup using an immersion blender or regular blender with a folded towel over the lid and the cap in the lid removed.
  6. Garnish with basil and serve with grilled cheese.
