Bacon Wrapped Waterchestnuts

A salty, sweet and crunchy little bite, these bacon wrapped waterchestnuts are a great appetizer.

Ingredients
  

  • 1 lb bacon slices cut in half
  • 1 can pineapple rings each ring but into 6 chunks
  • 2 cans whole waterchestnuts drained
  • Toothpicks
  • 2/3 c ketchup
  • 1 c brown sugar

Method
 

  1. Preheat oven to 325 degrees.
  2. Wrap one slice of bacon around a pineapple chunk and waterchestnut and secure with a toothpick.
  3. Bake for 1 hour, stiring halfway through and basting with the rendered bacon fat.
  4. Stir together the ketchup and brown sugar. Pour onto the waterchestnuts and stir together.
  5. Bake for 20 minutes until the sauce is thick and bubbly.
  6. Cool slightly before serving.
