Chicken Sausage over Grilled Veggie Hash

This quick and easy veggie hash makes a great bed for grilled sausage.

Ingredients
  

  • 1 zucchini cubed
  • 1 summer squash cubed
  • ½ green pepper chopped in ½ inch pieces
  • 1 gala apple chopped
  • 1 sweet onion chopped
  • 1 T olive oil
  • Salt
  • Pepper
  • Garlic Powder
  • Chicken Sausage any flavor you like
  • Fresh basil chopped
  • Fresh thyme chopped
  • Feta or goat cheese crumbled

Method
 

  1. Preheat your grill over medium-high heat. Set your grill basket on the grill while it preheats so the basket is nice and hot.
  2. Toss the cubed veggies and apple with the olive oil, salt, pepper, and garlic powder. Place in the grill basket and grill until tender but not mushy, about 7 minutes. Stirring occasionally.
  3. Meanwhile grill the sausage.
  4. Remove veggies from the grill and toss with the basil and thyme. Slice the sausage into bite-sized pieces.
  5. Serve the sausage on top of the veggies and if desired sprinkle with a little feta or goat cheese.
