Chocolate Chip Peanut Butter Mousse Phyllo Cups

A great no-bake summer recipe that uses one of my all-time favorite flavor combinations –peanut butter and chocolate.

Servings: 15 bites
Course: Dessert

Ingredients
  

  • ¼ creamy peanut butter
  • 1 ½ c Cool Whip thawed
  • 4 T mini semi-sweet chocolate chips, divided
  • 1 pkg frozen mini phyllo shells, thawed (15 shells)

Method
 

  1. Whisk together the peanut butter and cool whip, just until combined. Fold in 3 T of chocolate chips.
  2. Spoon mixture into a plastic bag. Cut off a corner.
  3. Pipe into thawed mini phyllo shells.
  4. Garnish with remaining chocolate chips
