Fresh Strawberry Pie

This strawberry pie reminds me of the week I spend with my grandparents at the cabin. The pie isn't baked so the strawberries stay nice and fresh and the glaze that goes over the top is silky and not to fresh and holds everything together. I confess most of the time I make this pie, I put more than 3 cups of strawberries into the crust - I like a nice big mound of berries.

Ingredients
  

  • 1 prebaked pie crust
  • 1 qt fresh strawberries divided
  • 3/4 c sugar
  • 3 T cornstarch
  • 1 c water

Method
 

  1. Put about 3/4 berries in the baked pie shell.
  2. Mash 1 c berries and add other ingredients.
  3. Cook until mixture thickens.Note: You can cook this in a small saucepan or the microwave.
  4. Pour this mixture over the berries in the pie crust.
  5. Chill for at least an hour, serve with whipped cream.
