Grilled Lemonade

Grilling lemons before squeezing them for lemonade gives you a refreshing lemonade with notes of caramel.

Ingredients
  

  • ¾ c sugar
  • ¾ c water
  • 9 small to medium lemons to yield 1 ¼ c juice
  • 4 c cold water

Method
 

  1. Bring sugar and water to a simmer in a small saucepan. Cook until sugar is dissolved and cool to room temperature.
  2. Preheat grill to medium-high heat.
  3. Slice lemons in half. Grill, cut side down for 3-4 minutes until cut sides are charred.
  4. When cool enough to handle but still warm, squeeze juice from lemons. You want about a 1 ¼ cups of juice. Strain juice through a mesh strainer or cheese cloth to remove pulp and seeds.
  5. In a pitcher stir together simple syrup, lemon juice and water.
  6. Serve over ice.
