Grilled Rainbow Trout with Cilantro Jalapeno Relish

Rainbow trout have pink flesh like salmon and a similar taste, while maybe not as strong. Grilling trout filets over charcoal adds a nice smokey flavor and the cilantro and jalapeno relish adds a fresh bite. This is a great way to enjoy fresh caught trout!

Ingredients
  

  • 6 rainbow trout fillets
  • 1 bunch green onions
  • 1 jalapeno pepper
  • 2 cups cilantro leaves
  • lime juice
  • olive oil
  • sesame seeds
  • salt

Method
 

  1. Brush the fillets with a mixture of 3T lime juice and 1T olive oil
  2. When the grill is ready, place the filets skin side down on the grill, put a couple slices of lime on each, cover and cook for about 7 minutes. The fillets are done when the meat starts to flake and peel off the skin.
  3. Chop the green onions and jalapeno pepper, combine with cilantro leaves, 1T olive oil, the juice of 1/2 lime, and a pinch of salt.
  4. Spoon the relish on top of each fillet and sprinkle with sesame seeds. Enjoy!
