Sweet Chili Chicken Pizza

A quick and easy sweet chili pizza with chicken, peanut sauce, and fresh herbs and veggies.

Ingredients
  

  • 1 chicken breast
  • Garlic powder to taste
  • Kosher Salt to taste
  • Pepper to taste
  • Naan bread 2
  • Sweet Chili sauce
  • Red bell pepper diced
  • Red onion diced
  • 1 c Monterrey Jack cheese shredded
  • Bottled peanut sauce
  • 1 carrot cut into long thin strips with a vegetable peeler
  • 1/3 c bean sprouts
  • Basil cut into thin strips
  • Cilantro roughly chopped
  • 1/3 c peanuts chopped

Method
 

  1. Preheat oven to 425 degrees, or heat broiler to high. Line a baking sheet with foil.
  2. Pound chicken to an even thickness. Season both sides with garlic powder, salt and pepper. Grill chicken on a medium-high grill for approximately 8 minutes until chicken registers 165 degrees (or pan fry with a little olive oil). Allow chicken to rest for 5 minutes then cut into bite sized pieces.
  3. Spread sweet chili sauce, amount to taste, onto two pieces of Naan.
  4. Top with bell pepper, onion, and chicken.
  5. Sprinkle each half evenly with cheese.
  6. Bake for 10 minutes or broil for about 5, until the cheese is melted. If you broil it keep an eye on it as broilers (as well as ovens) vary).
  7. Drizzle with peanut sauce.
  8. Top with bean sprouts, basil, cilantro, carrots and peanuts.
  9. Slice and enjoy.
