I LOVE my Cuisinart Griddler (#EarnsCommission) which can be used as a panini press or has reversible flat plates that are great for making quesadillas. Ironically, when I bought it I had no interest in making panini. I actually wanted to replicate Taco Bell’s Grilled Steak Taquitos. Eventually we moved on to making other things with it, panini included. This recipe is one of my favorites and best of all its quick and easy.
Here’s what you need:
I like to cook bacon in the oven on a wire rack over a cookie sheet lined with parchment (catches the grease and makes one less dish). Cook the bacon at about 400 for 20 minutes, your nose will tell you when it’s done (make sure to account for snaking on a piece or two). While the bacon cooks you are free to do other things instead of tending or flipping it.
Mash some avocado and spread onto some sourdough. Top with sliced apple.
Then add some sliced sharp cheddar (or any cheese you like) and bacon slices.
Set your panini press to med-high and let the sandwich cook about 5 minutes until the cheese begins to melt and the bread has nice golden grill marks. I don’t put butter or oil on the bread because I don’t like the greasy feeling on my fingers when I eat the sandwich, but if you like it go for it! If you don’t have a panini press, you can use a grill pan on medium heat. Just set another pan on top to press the sandwich while it cooks and flip about halfway through.
The sandwiches are ready to eat!
- 4 slices of sourdough
- 1 avocado, mashed
- 1 Granny Smith apple, thinly sliced
- Sharp white cheddar cheese, sliced
- 10 slices of bacon, cooked
- Spread the mashed avocado onto each slice of bread.
- Top with remaining ingredients and close the sandwiches.
- Cook on a panini press on med-high heat for about 5 minutes until the cheese begins to melt and the bread has golden marks on it.
