Have you ever seen the TV show Chopped? As far as cooking shows go, its probably the best. The gist of the show is each chef is given a basket of a few random mystery ingredients and they have to create either an appetizer, dinner, or dessert incorporating each mystery ingredient. Its a pretty fun idea, it forces you to be creative (not something I am that great at). Dana and I stole this idea, and sometimes will play our own version of Chopped when we get together for dinner. One of these times I created the recipe we have here, blackberry wing sauce. I can’t remember the exact ingredients we were given, but I think it was blackberry jam, agave nectar, and chicken. My boyfriend at the time, Aj, was the mastermind behind this. Blackberry jam isn’t the first thing or the 50th thing I think of when I think of chicken wings, I am more of a buffalo sauce traditionalist, but the jalapeno, lime, and garlic make this a really good sauce!
Here’s how it goes: (you’ll also need some garlic and chicken wings, which I foolishly forgot in this picture)
Sauces are really easy, all you have to do is cut up your ingredients, and either whisk them together, blend them in a blender, or use an immersion blender -#EarnsCommission (the best option in my book) to really mix everything together.
And… tada!
Baked chicken wings are so much better than fried or even crock potted in my opinion, they get crispier than if cooked in a crock pot, and less greasy than fried. All you have to do is put a cookie rack on a baking sheet covered in tin foil, spray the rack with cooking spray, and put your wings on the racks. Cub Foods has ‘drummette and wingette’ packages, which are my favorite because they aren’t as big as normal wings, and have a fun name.
Bake them at 4oo for 50 minutes.
Then just toss them in the sauce and enjoy!
- For the sauce:
- 10 oz jar of blackberry jam
- ½ jalapeno, chopped
- Juice of ½ lime
- ¼ cup agave nectar
- 2 cloves garlic, chopped
- salt and pepper
- crushed rep pepper flakes
- For the chicken wings
- 1 package of chicken wings (3 pounds)
- For the sauce:
- Chop the jalapeno and garlic, add to a small bowl
- Add jam, lime juice, agave nectar, salt, pepper, and red pepper flakes
- Use an immersion blender to mix everything together, or blend in a blender
- Wings:
- Set cookie cooling wracks on baking sheets covered in tin foil, spray with cooking spray
- Place wings on wracks
- Bake at 400 for 50 minutes
- Toss wings in sauce and enjoy
