These chicken Caesar wraps are one of our go-to meals when we are looking for something quick and light. It’s the perfect break from all the rich food we are currently enjoying during the holiday season but also tastes great on a hot summer day.
While Tory & I have an awesome recipe for a traditional Caesar dressing from our neighbor Eloise (that we’ll make and post one day), for these wraps I’m not afraid to take a shortcut and use bottled Caesar dressing. After all, one of the best parts of this recipe is that you get dinner on the table in about 20 minutes.
Here’s what you need:
Sorry, homemade croutons, I totally forgot to include you in the picture.
Season the chicken with some salt and pepper. I also used Mural of Flavor, an awesome general purpose seasoning I get from Penzeys. Cook the chicken either on the grill, on a grill pan or just sauté it. It takes about 4 minutes a side on medium-high heat for me.
Let the chicken rest and the cut it into cubes.
While the chicken is cooking start prepping the salad. Chop the romaine. Toss with your desired amount of Caesar dressing. Add in the croutons (try our homemade croutons, but don’t be afraid to use some out of the bag either, after all this about getting dinner on the table quickly!) and parmesan cheese.
Warm the tortillas (which makes them easier to wrap) and top with salad and chicken. Roll up like a Chipotle burrito (come on, we’ve all been there and seen how it works).
Enjoy!
