Chicken Sausage over Grilled Veggie Hash

We’ve been trying to incorporate some lighter options into our meal repertoire along with more vegetables.  But one of the most important things to us is that these lighter meals still have big flavors.  We were in the mood to grill sausage the other day and were trying to decide on a side dish.  I don’t know what specifically prompted us to try this specific combination of veggie has or even why the husband suggested a veggie hash (this is Mr. I Don’t Eat Cooked Vegetables) but it turned out great.  We also added an apple which added a nice touch of sweetness and complemented the chicken.

Caramelizing the veggies on the grill and tossing them with fresh herbs and then serving them with some chicken sausage led to a tasty and satisfying dinner!

Here’s what you need:

You can use any type of chicken sausage (or really any sausage you want) we used a red pepper and asiago this time, but also really liked a version with pepperjack for the extra heat.

Set your grill for about medium-high heat and set your grill basket on the grill to pre-heat.  Please ignore the fact that I’m using my gas grill.  Charcoal is by far my favorite way to grill, but on a week night after work saving that 30 minutes to light the coals makes a big difference.

Start by cubing up your veggies and the apple.  I used a combination of onion, zucchini, yellow summer squash, green pepper, and a gala apple.  Add a little salt, pepper, and garlic power along with a drizzle of olive oil.

Toss this together and throw into your preheated grill basket.

You’ll also want to throw the sausage on about now.  Cook the veggies until they soften but aren’t mushy and develop some nice charred marks.  About 7 minutes or so depending on the heat of your grill.

Take the veggies off and toss with chopped herbs – I used some fresh thyme and basil.

Slice the sausage.

Serve the sausage on top of a big bed of the grilled veggies.  If you’re in the mood for it sprinkle with some goat cheese or feta.  I happened to have goat cheese in the fridge and well I’m a little addicted to cheese so I couldn’t resist.  Although, the first time we made this we bought cheese to put on and totally forgot about it – and didn’t even miss it (crazy, I know!).

This quick and easy veggie hash makes a great bed for grilled sausage.

Serves: 3
Ingredients
  • 1 zucchini, cubed
  • 1 summer squash, cubed
  • ½ green pepper, chopped in ½ inch pieces
  • 1 gala apple chopped
  • 1 sweet onion chopped
  • 1 T olive oil
  • Salt
  • Pepper
  • Garlic Powder
  • Chicken Sausage, any flavor you like
  • Fresh basil, chopped
  • Fresh thyme, chopped
  • Feta or goat cheese, crumbled
Instructions
  1. Preheat your grill over medium-high heat. Set your grill basket on the grill while it preheats so the basket is nice and hot.
  2. Toss the cubed veggies and apple with the olive oil, salt, pepper, and garlic powder. Place in the grill basket and grill until tender but not mushy, about 7 minutes. Stirring occasionally.
  3. Meanwhile grill the sausage.
  4. Remove veggies from the grill and toss with the basil and thyme. Slice the sausage into bite-sized pieces.
  5. Serve the sausage on top of the veggies and if desired sprinkle with a little feta or goat cheese.
