Several years ago, I went to my first cooking class through our local Community Ed program at a local high school. It was an appetizer class and when we got there the instructor has a simple appetizer ready and waiting for us. Skewers of, cheese, pepperoni chunks and French bread cubes with some pizza sauce to dip them in. So when I was looking for something to bring to a holiday potluck that would need to be able sit out for a while and where I didn’t have a plug in to keep a crockpot warm; I channeled that appetizer.
I used mini cheese tortellini, fresh mozzarella pearls and a slice of pepperoni that I served alongside pizza sauce and pesto sauce for dipping. I thought about doing one or the other but I couldn’t decide and the two sauces just continued my Christmas color theme. They were great at room temperature, simple to make, and added a nice variety to the potluck which had your standard meatballs, little smokies, and cheese dip.
Here’s what you need:
Start by boiling the tortellini according to package directions. I even found colored pasta that included green and red noodles – perfect for Christmas!
When the pasta is done, drain and rinse in cool water to stop the cooking.
Set up an assembly station with an open bag of pepperoni, mozzarella balls, and the pasta.
Now it’s as simple as folding the pepperoni into quarters, which makes it the same size as the other ingredients. Then sliding a slice of folded pepperoni, mozzarella ball, and a tortellini piece onto a toothpick.
Keep going until you fill your platter or run out of ingredients. For me it ended when I ran out of pasta. Fill up a bowl with pizza sauce and one with pesto.
Keep in the fridge until ready to serve.

- Pepperoni slices
- Mozzarella pearls
- Toothpicks
- Pesto
- Pizza Sauce
- Cook tortellini according to package directions. Rinse under cold running water to stop cooking.
- Fold pepperoni into quarters. Thread the pepperoni, mozzarella pearl, and piece of tortellini onto a toothpick.
- Serve with pesto and pizza sauce.
