Did you know that Americans eat more avocados on Super Bowl Sunday than any other day of the year? Guacamole is certainly a major player in these appetizer fueled parties. In fact according to the Huffington Post American’s were expected to consumer 79 million pounds of avocadoes during last year’s Super Bowl.
So in honor of one of the most popular Super Bowl Foods, my last pre-Super Bowl appetizer post will be Sweet Corn Guacamole.
This is just my favorite guacamole mixed with about ¾ cup of sweet corn. I like it with the sweet corn fresh or charred. It’s hard to pick a favorite.
If you make this in late summer or are somewhere you can get sweet corn on the cob, I recommend grilling it first, just to char it and then slicing off the cob. If you can’t get fresh sweet corn, try a frozen corn that you roast on a baking sheet at 400 degrees for 5-10 minutes until it starts to char.
