I’ve written before that one of my most favorite things in life is a good sandwich aka slamwich aka sangwich. One of my most favorite slamwich types is the panini. Its hard to find a really good panini these days, I don’t like it when its just meat and cheese smashed between two pieces of bread, those are boring. I like a lot of activities on my slamwiches, smashed and grilled between two pieces of really good bread. My sister knows how much I like paninis, and being the nice sister that she is, bought me a Cuisinart Griddler (#EarnsCommission) for my birthday. My only plans for the griddler include using it as a panini press, I know that it can do a whole bunch of things, but it won my heart just with its ability to grill a slamwich. Because the sister is a very thoughtful gift giver, she also got me an entire cookbook dedicated to paninis to inspire my sangwich making. The other day I finally got around to making a panini that was blog worthy. I got the idea from my panini book, The Ultimate Panini Press Cookbook (#EarnsCommission), and changed it up a bit to fit me better.
Here’s how it goes:
I’m not a super fan of mayonnaise so I made an avocado spread instead, and added onions, because onions belong on everything.
The avocado spread is pretty easy, scoop out the avocado from its peel. My cat Edward loves avocado, second to string cheese, so he always gets to lick the peel after.
Then add in the Greek yogurt (you’ll notice from the picture that I intended to use half yogurt, half sour cream, but only used yogurt, feel free to choose your own adventure), add the salt, lime juice, and cilantro. Then mash with a fork and stir until its nice and smooth.
Another thing I love about sandwiches, is they are super simple to make. Essentially all you have to do is pile stuff on a piece of bread. The hardest part is cutting up your activities. Remember to preheat your panini press to medium-high, or if you’re not lucky enough to have received one as a birthday gift, you could use a grill pan or skillet, you just need something heavy to set on top, they make weights for that I’m pretty sure but a second skillet will work just fine.
So, start by slicing yourself 4 pieces of bread (or more or less depending on how many paninis you’re making), butter one side of each slice, then lay your cheese down, add jalapenos, then tomatoes on top of those, layer on some onions, then top with turkey. Spread the avocado spread on one side of the other piece of bread.
Top your activity piled piece of bread with the other, avocado side down (butter side up), and put it on your panini press. Close the lid and grill for about 5 minutes, or until the bread is grilled and the cheese is melty.
Cut in half and enjoy! You’ll probably want to let it cool a bit first too.
- Panini:
- Sour dough bread
- ½ pound deli sliced turkey
- 1 tomato, sliced
- ¼ red onion, sliced
- Monterrey Jack cheese, sliced
- Pickled jalapeno slices
- Avocado spread:
- 1 avocado
- 1T lime juice
- Pinch of salt
- chopped cilantro
- ¼ cup Greek yogurt (or sour cream)
- To make the avocado spread, scoop out the avocado into a bowl, add the other ingredients and stir until smooth.
- Preheat the panini press or pan to medium high.
- Slice your bread, butter one side of each slice.
- Layer on cheese, jalapenos, tomato, onions, and turkey.
- Spread the avocado spread on the un-buttered side of the other slice of bread, place this slice avocado side down on your sandwich.
- Grill on the panini press until the cheese is melted and the bread is toasted, about 5 minutes.
