Homemade Vanilla Sugar
After I finished making vanilla extract for Christmas gifts, I had some leftover partially used vanilla beans that I couldn’t bear to through away.
So what did I do? I decided to use the beans as many ways as much as I could. I turned to my trusty source, Google, and soon found a myriad of ways to use leftover vanilla beans. The first thing I made was vanilla sugar.
Vanilla sugar works great to add some vanilla flavor to anything you’re adding sugar to. Try stirring it into your morning coffee along with some cinnamon-vanilla sugar toast!
This is exactly as simple as it sounds; it’s a simple matter of adding vanilla to sugar and allowing it to hang out.
Here’s what you need:
This is a one quart jar, and I’m using 2 vanilla beans.
Start by scraping the caviar out of the vanilla beans with the back of your knife. These ones are already split from being used in my homemade extract.
Add the vanilla to the sugar, and use your finger to break up the clumps of caviar and work it into the sugar.
Now add a little sugar into the jar, just enough so you can shove a vanilla bean in and have it stand up. This is going to ensure that you can pour the sugar around it rather than having it fall to the edge of the jar (no real scientific reason for this other than I thought it looks better). Do this with both vanilla beans.
Add the remaining sugar to the jar.
Now add a cute label to the jar if you want to give it away, which I did.

- Split the vanilla beans and scrape the caviar out with the back of your knife. Work it into the sugar with your fingers. Add the sugar to the jar along with the vanilla beans.
