Living in Minnesota, when Easter comes around it’s not exactly the pinnacle of fresh fruit or berry season. Yet, when I’m hosting Easter dinner – I like to have something fresh and fruity as part of the meal. You know some form of a fruit salad. That’s when I turn to pudding’d fruit.
This recipe came from my Auntie Moni and is one of those recipes that reminds me of my childhood. Pudding’d fruit is a great solution for this – it starts with canned mixed fruit but we freshen it up with some fresh strawberries, blueberries and bananas. You make a sauce with vanilla jello pudding mix and the juice from the canned fruit instead of milk making it a thick fruity glaze instead of a pudding
Here’s what you need:
Start by draining the canned mixed fruit into a measuring cup – you’re looking for a cup of juice. Drain and discard the remaining juice.
Mix the juice and the jello together in a medium bowl.
Microwave for one minute and then in thrity second intervals until thick, stirring in between.
Add canned fruit and some strawberries.
Mix together and let sit for a few hours for the pudding to set up. I also highly recommend licking the spoon you used to stir this all together – it’s going to be REALLY tasty.
Now we’ll add the banana and the blueberries right before serving. We don’t add the bananas until the end because they will turn brown and the blueberries because they will die everything blue (this is because I’m using thawed frozen wild blueberries – fresh store bought blueberries won’t do this).
Here’s it all mixed together.
Just pour it into a serving bowl and enjoy.
- 2 cans Del Monte chunky mixed fruit, in juice
- 1 small package vanilla pudding mix (not instant)
- Fresh strawberries, quartered
- Blueberries, 1 cup
- 2 sliced bananas
- Mix pudding mix with 1 cup of juice from the canned fruit in a medium bowl. Microwave for a minute, then continue in thirty second intervals until thick, stirring in between.
- Stir in the strawberries and canned fruit.
- Chill for a couple hours.
- Mix in blueberries and sliced bananas.
- Serve.
