Apple Bacon Naan Pizza

I’m always looking for quick weeknight meals and when I saw the idea for an apple bacon pizza in Cooking Light, I thought I’d give it a try.  I changed things up a little bit and even called an audible in Target when I was grocery shopping and discovered they didn’t sell pita – hello Naan crust.  Anyway the apples, bacon, and walnut on this pizza make for a tasty but lighter take on pizza.  And after the feast we had on Easter, light is a welcome treat!

Best of all it’s on the table in about 15 minutes – as long as you have the bacon precooked when you start.  Which I did in this case. Lately, whenever I fry up bacon pieces, I fry up more than I need because I find they are great to have on hand for things like this pizza, tossing on salads, sprinkling in mac and cheese, you name it!

Here’s what you need:

Start by preheating your broiler on high.  Cover a baking sheet with aluminum foil.  Brush the Naan lightly with olive oil.

Toast the walnuts in a skillet on medium-low until the nuts.  You can tell when they are ready when they become fragrant.  Remove from the pan and allow to cool in a bowl or on a plate, they can burn if left in the hot pan.

Grate the cheeses.  You want about a quarter cup of the gruyere, cheddar, and 2 T of the Parmesan for 2 pizzas.  Note that I’m going a little light on the cheese, normally, I’d probably pile on about twice this much but the inspiration was for cooking light after all.  I did choose very flavorful cheese though which allows you to use less but still get great taste!

Thinly slice the apple.

Top the Naan with the gruyere and cheddar.

Shingle on the apples.

Top with the bacon, walnuts, thyme, and sprinkle on the parmesan (I forgot the parmesan when I took the picture – but don’t worry – I remembered before I baked it!)

Broil for 2-3 minutes until the parmesan is melted and the edges of the crust begin to brown and blister.

Slice and enjoy!

The most recent time we made this, we planned on splitting one and saving the other for leftovers because neither of us was very hungry that night.  Well these were too good to stop eating and we ended up eating all of it anyway.

This quick and easy pizza is a great light weeknight meal. The sweet apples complemented by the salty bacon.

Serves: 2 pizzas
Ingredients
  • 2 pieces of Naan bread
  • Olive oil
  • ¼ c Gruyere, shredded
  • ½ c sharp white cheddar cheese
  • 1 apple, thinly sliced
  • 2 T walnuts, toasted
  • ¼ c crumbled bacon
  • 1-2 t fresh thyme
  • 3 T freshly grated parmesan cheese
Instructions
  1. Preheat the oven to broil. Cover a sheet pan with aluminum foil.
  2. Brush the Naan bread lightly with olive oil.
  3. Shingle the apples on top of the Naan bread. Top with the gruyere and white cheddar. Sprinkle on the bacon, walnuts, and thyme. Finish with the parmesan cheese.
  4. Broil for 2-3 minutes until the cheese is melted and the edges of the Naan begin to brown and blister.
  5. Slice and enjoy.
