Buffalo Chicken Bites

Buffalo wings might be one of the most quintessential appetizers to serve while watching football. And I really love buffalo flavors, but as that current Burger King buffalo chicken fries commercial proves they can be really messy to eat.  And although you can make some good baked ones, they are really the best when you fry them and I try not to fry things very often.  So I look for other ways to enjoy buffalo chicken flavors.  Buffalo chicken pizza, buffalo mac ‘n cheese, buffalo chicken soup ,buffalo chicken salad, and for an appetizer these buffalo chicken bites.

I was looking for other buffalo flavored appetizers to try for a snack and found these buffalo chicken bites.  These buffalo chicken bites have that satisfying buffalo chicken flavor without all the mess of eating wings. I also like that they are baked and maybe just a little healthier of an appetizer without sacrificing any flavor. They are a great thing to serve when having people over to watch the big game because they can be eaten one handed.

Here’s what you need:

Start by shredding three cups of cooked chicken.  We used leftover rotisserie chicken.  You can also use poached chicken or roasted chicken breasts (check out how I do it in my buffalo chicken soup recipe).

Mix together some cream cheese, hot sauce, cheddar cheese, and green onions with a fork until it’s all combined.  Stir in the cooked shredded chicken.

Roll them into 1-1/2 to 2 inch balls and set on a plate.  I used my large 1-1/2 T cookie scoop (#EarnsCommission) leveled off to make even sized balls.

When you have them all rolled out on a plate, set up your breading station.  You’ll need a bowl with flour, another with beaten eggs, and a third with crushed born flakes.

Start by rolling the ball in flour.

Then the beaten egg.

Allow the egg mixture to drip off and then roll in the crushed born flakes.

Arrange on a baking sheet covered with parchment.

Bake at 350 degrees for 20-25 minutes. The outside will brown slightly.  Since the chicken is already cooked, what we really want to happen is for the cheese to melt and get nice and gooey inside.

Serve warm with ranch or blue cheese dressing for dipping or both.

These also freeze well before baking.  Set them on a baking sheet in the freezer to flash freeze.  Once they are frozen, place in a plastic freezer bag.  Bake from frozen and bake an additional 5 minutes.

Serves: 24 bites
Ingredients
  • ¼-1/2 c cayenne pepper sauce (like Frank’s Red Hot)
  • 4 oz cream cheese, softened
  • 1-3/4 c finely shredded sharp cheddar cheese
  • ¼ c chopped green onion
  • 3 c shredded chicken
  • 3 eggs, beaten
  • 4 c crushed corn flakes
Instructions
  1. Preheat oven to 350 degrees and line a baking sheet with parchment paper.
  2. Mix together cayenne pepper sauce, cream cheese, cheddar cheese and green onion with a fork until everything is blended into the cream cheese. Stir in the chicken.
  3. Use a large cookie scoop to form into 1-1/2 to 2 in balls. Roll in flour. Dip into beaten egg and let excess drip off. Roll in the corn flakes pressing lightly to adhere.
  4. Place on baking sheet. Bake for 20-25 minutes.
  5. Serve with ranch or blue cheese dressing.
